I used a mix of these 3 recipes - Ina Garten, Rachael Ray and Once Upon a Chef. Only using what I could find in the boss's pantry and fridge without having to go out and buy jalapeno peppers. Luckily for me the boss has a well stocked pantry.
- 1/2 cup tequila
- 1 cup lime juice
- 1/4 cup olive oil
- 1 tbsp chili pepper
- 2 cloves garlic, minced
- salt
- pepper
- 1 tbsp hot sauce
- 1/2 tsp ground coriander
- 1/4 tsp oregano
- 1 tbsp honey
Mix together in ziplock bag
Marinate at least 4 hours
BBQ
I served it with BBQ corn on the cob and fresh tomato salad. I really liked this marinade and will use it again.
