I have Sharyn to thank/blame for this recipe. She posted it on Facebook. I love lemon, so of course I had to bake them for myself.

It's a very simple recipe, and easy to make.
Base:
- 125g of butter, softened
- 1 and 1/3 cups of plain flour (175g)
- 1/4 cup sugar (60g)
- Mix together butter, flour and sugar until crumbly. Recipe says use a fork, I used my fingers.
- Press into a 20cm square baking pan
- Bake for 20 minutes at 180C (350F)
- Crust will look white, do not brown.
Lemon Layer:
- 2 eggs
- 3/4 cup sugar (185g)
- 2 tbsp plain flour
- 1/4 tsp baking powder
- 3 and 1/2 tbsp lemon juice
- Combine eggs, sugar, flour, baking powder and juice in a blender (I couldn't find a blender so used a food processor)
- Blend until well mixed
- Pour over baked crust
- Return to oven and bake for an additonal 20 minutes
- Remove from oven and sprinkle with icing sugar
- Let cool before cutting and serving
I had read in the comment section of allrecipes.com that the bars stuck to the pan, so I lined my baking pan with parchment paper and that worked for me. I'll make these again.
